Red, White, & Blue Cookie Sandwich

I don't know about you, but I love summer!!!! (times infinity!!) The warm days, breezy beach nights, the sun stays out later, endless BBQ's and gathering with friends…I could go on and on, but will press pause for the sake of boring you with my favorite things. However, in light of Solstice and the 4th of July I wanted to create something to that I could not only enjoy, but honor our Founding Fathers too.  If you are still looking for a way to spice up your 4th of July Bash and you like the theme in these images, I used these American Flag Napikins, American Flag Outdoor Pillow, and this platter for styling, all can be purhcased from Pottery Barn!  Wishing you and yours a happy and safe 4th, happy baking & God Bless!

Ingredients
For the Cookie (makes 18 cookies, or 9 cookie sandwhiches )

  • 1 Stick Butter
  • 1/4 cup Coconut Sugar
  • 1/4 Coconut Flour
  • 2/3 Cup Cashew Flour (meal)
  • 2 Tlb Coconut Oil
  • 2 tsp Vanilla
  • 1 Egg
  • 1/4 tsp Salt​

For the Filling:
(makes filling for 9+ sandwiches)

  • 1 1/4 cup White Chocolate Chips
  • 1 Stick Butter
  • 1 Cup Coconut Cream
  • 4 oz Blueberries 
  • 2 tsp Vanilla
  • zest of 1 lemon (not pictured)

Directions:

Preheat oven to 350˚

1) Blend butter, coconut sugar, and coconut oil until creamy (little to no gritt from the sugar).

2) Add in and blend the rest of the ingredients, adding the coconut flour last. Place dough on a sheet of wax paper and roll into log form with a 2 1/2 -3 inch diameter. Chill for at least 2 hours -I let mine chill overnight. 

3) After chilling remove the wax paper and begin slicing into 1/3 inch slices.  Place on cookie sheet and bake for 10 minutes

4) Remove from oven and let sit on cookie sheet for 2 minutes before moving to cooling rack.

5) Place all ingredients for filling in a small pot and heat on medium-low, until everything has melted and is incorporated. 
Set in the freezer for 25 minutes until contents is cool and begins to harden, stir occasionally. 

6) Pour filling mixture into a bowl and blend on high for 7-8 minutes, or until it becomes firm, like a heavy whipped cream. Chill until you are ready to assemble.

7) Transfer contents to a bowl and stir in blueberries and lemon zest

8) Assemble cookie sandwich. 

9) Add a touch of red with sliced strawberries and enjoy!!
