Get your green on with this tasty, refreshing, minty smoothie! If you're anything like me, you are a mint fanatic. I especially love the Christmas season and Saint Patrick's Day for the green and peppermint everything that you get to eat, drink, and essentially inject into your system, but let me tell you: I most definetly do not need to manufacture an excuse to mint-ify anything. I found a way to make homemade peppermint patties, paleo peppermint ice-cream, and peppermint yogurt (surprisingly delightful!!). The list goes on and on, recipes to come at a later date, of course. However, as if you need more convincing as to why you should eat mint, try these on for size. Mint helps relieve irritable bowel syndrome...yes I just went there. The peryllyl alcohol in mint is cancer fighter; it also battles allergies with its high levels of rosmarinic acid that soak up free radicals like a sponge and increase effectiveness of medications used to fight candida (a.k.a. candidiasis), a specific type of yeast.
Might I also suggest this is a great alternative to the Shamrock Shake at McDonalds. In case anyone is tempted, it has over 800 calories, 23g of fat, 115g sugar, and additives known to cause ADHD, colon cancer, and insulin resistance. Whew! Not worth it! As if there is anything else I could say to convince you to try this refreshing treat, I will let it speak for itself...so get out your blender and give it a whirl!
- 1/2 cup coconut cream
- 1/2 cup spinach
- 1/2 cup dinosaur kale
- 1/2 cup mint leaves
- 1/2 cup ice
- 2 Teaspoons vanilla
- 2 Tablespoons honey
- 3 Tablespoons water
Put all ingredients in a blender.
Serve and enjoy!!
